*12  Observed the following improper hygienics: 1) line chef eating 2) employee beverages on bottom of shelf near cooking area, 3) knife in hand sink. NO eating or drinking in kitchen. All eating and drinking is to be done in dining area. Hand sinks are for washing hands only. Please keep all utensils, dishes, etc. out of hand sink. (750.560) Immediate/Onsite
*41  Observed sanitizer bucket in bar to be too strong. Sanitizers in buckets for wiping down counters must be between 50-100 ppm. Remixed and tested at 75 ppm. Immediate/Onsite
Observed improper labeling in all coolers and freezers. Please label with name of item and expiration date. Anything out of original packaging, label w/name of item, use by date and time cooling began. Please label properly or items will be discarded on next inspection. (750.100) Next Inspection
15  Observed the following non-food contact surfaces to be improper: 1. torn gaskets to salad prep cooler (next to hand sink), 2. rust on racks to walk in cooler (one on right), 3. rust on racks to walk in freezer (one to far left), 4. rust on racks in liquor/beer walk in cooler, 5. chipped wood on shelf w/plates above cutting boards, 6. shelf w/cutting boards w/heavy corrosion, 7. chipped wood on shelf in back hallway where napkins are stored. Repair, repaint or replace. (750.690) All non-food contact surfaces shall be smooth, easily cleanable and corrosive free. Next Inspection
23  Observed the following non-food contact surfaces in need of cleaning: 1. gaskets to freezer in cooks line, 2. thermometer in walk in cooler, 3. wire racks in back room where pans are stored, 4. gaskets of waitress station cooler in kitchen, 5. inside bottom of 2-door cooler in wait station.
